Samidori is a top-tier Japanese matcha cultivar prized for its balance, clarity, and natural sweetness. Grown in Uji, Kyoto — one of Japan’s most historic matcha-producing regions — this is a matcha chosen for moments when flavour, texture, and origin truly matter.

Often described as “ceremonial grade,” our Samidori represents the highest quality of matcha traditionally prepared for whisking: vibrant, smooth, and deeply expressive. While “ceremonial” is not a regulated or certified term, it is commonly used to describe matcha made from the finest leaves, with careful cultivation and processing, and a flavour profile suited to being enjoyed on its own.

A brief lineage

Whisked tea preparation flourished in China during the Song Dynasty (10th–13th centuries), where powdered tea was valued for its texture, aroma, and meditative preparation. This practice was later introduced to Japan by Buddhist monks, where it evolved into the foundations of Japanese tea ceremony.

In Uji, near Kyoto, matcha production became increasingly refined — with careful shading, stone-milling, and cultivar selection shaping the matcha we know today.

Samidori is part of this lineage: a cultivar developed for ceremonial use, offering both structure and softness in the cup.

Taste profile

Floral, highly aromatic, with notes of green snap peas and panna cotta. Expect a clear, luminous cup with gentle umami, natural sweetness, soft vegetal notes, and a smooth almost creamy mouthfeel. Bitterness is minimal, allowing nuance and balance to take the lead.

Samidori rewards slow attention — revealing complexity rather than intensity.

How to enjoy

Ceremonial matcha is traditionally enjoyed whisked simply with hot water, allowing the full expression of the leaf to shine. This preparation highlights texture, aroma, and the cultivar’s natural balance.

That said, this is still your matcha.

Samidori can absolutely be enjoyed in lattes or modern preparations, but it truly shines with minimal additions — much like a fine wine, a single-origin chocolate, or a geisha coffee bean. Many people choose to taste it plain first, then explore it in their own way.
